Fast Rice and Beans (mild, medium, or spicey!!)

Last week we had an in-person yoga teacher training event here at the house. We have a lovely property here and the grounds are beautiful this time of year. We were all very excited to be together and as we often do, we all shared food. The teachers all posted what they were making or bringing and after looking at the list I decided that with little time to shop or cook that i would make one of my old standby vegetarian, gluten free dishes that never seems to disappoint for flavour and quantity to feed an army in a short amount of time. In 22 mins flat you have have 2 pots of food that will suffice for any potluck lunch or dinner.

Fast Rice
I like to use Basmati but you can use the rice of your choice
2 cups of water or broth to 1 cup of rice for this group i used 4 cups of broth and 2 cups of rice and had left overs.
1/2 teaspoon of salt
1 table spoon of ghee or olive oil

Method
Bring the broth to a boil and add salt, oil and then rice. Stir a few times, bring back to a boil and reduce heat to low and cover and let cook on low heat for 20mins exactly. After 20min alarm goes off, remove from heat, fluff with a fork and put the lid back on for a few minutes while you get the plates ready.

Beans/Lintels or other Legume
We used lintels at this event but you could use any beans or legumes
Canned for the fast version of this recipe 1-2 cans depending on how many you need to feed and how hungry they are :-)
1/4 cup of salsa/tin of beans (mild, medium or hot depending on your crowd - we used hot)

Method
Keep the liquid from the beans, and pour into a sauce pan, add salsa, stir and warm over low heat until the rice is cooked.

To Serve
Place the rice on your plate, ladle the beans on top and if you had time you could put some fresh chopped green onions or peppers on top or a couple of basil leaves. If some like it hot - you could also serve with a side of hot-sauce and enjoy a filling vegan (if using olive oil) dish that is gluten free.
